Ingredients

  • 1 package vegan chicken (such as soy curls or seitan)
  • 2 cups vegetable broth
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup non-dairy milk
  • 1/4 cup olive oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.
  2. Cook the vegetables: Add the mixed vegetables to the pot and sauté for another 5 minutes, stirring occasionally until they start to soften.
  3. Heat the vegan chicken: Stir in the vegan chicken and cook for a few minutes until it is heated through.
  4. Add broth: Pour in the vegetable broth and bring to a simmer. Let the mixture bubble gently while you prepare the dumplings.
  5. Make the dumpling batter: In a mixing bowl, combine the flour, baking powder, and a pinch of salt. Slowly stir in the non-dairy milk until just combined; it’s okay if there are a few lumps.
  6. Drop the dumplings: Using a spoon, drop spoonfuls of the dumpling mixture into the simmering broth. The dumplings should float on the surface.
  7. Steam the dumplings: Cover the pot with a lid and let the dumplings steam for about 10 minutes, or until they’re fluffy and cooked through.
  8. Season and serve: Once the dumplings are cooked, season the dish with dried thyme, salt, and pepper to taste. Stir gently to combine before serving.
