A cozy and flavorful Thai chicken noodle soup that brings warmth to your kitchen with rich broth and vibrant vegetables.

Ingredients

  • 2 chicken breasts, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 8 ounces rice noodles
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • Fresh cilantro for garnish

Instructions

  1. Prepare the broth: In a large pot, heat the chicken broth over medium heat. Add the red curry paste and stir until dissolved.
  2. Cook the chicken: Add the sliced chicken, coconut milk, fish sauce, soy sauce, and lime juice. Bring to a simmer and cook for about 10 minutes, or until the chicken is cooked through.
  3. Add vegetables: Stir in the mushrooms and bell pepper, and continue to simmer for another 5 minutes until the vegetables are tender.
  4. Cook the noodles: Meanwhile, cook the rice noodles according to package instructions in a separate pot. Drain and set aside.
  5. Assemble the dish: Divide the cooked noodles into bowls. Pour the hot soup over the noodles and top with chopped green onions and cilantro.
