Ingredients
2 chicken breasts, boneless and skinless
2 tablespoons olive oil
Salt and pepper, to taste
1 cup Greek yogurt
2 cloves garlic, minced
2 tablespoons lemon juice
1 cucumber, diced
1 tomato, diced
1 red onion, thinly sliced
½ cup olives, sliced
½ cup feta cheese, crumbled
4 large tortillas or pita bread
Fresh herbs (like parsley or dill), chopped
Instructions
Cook the chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Once done, remove from heat and let it rest for a few minutes, then slice it thinly.
Prepare the sauce: In a bowl, combine the Greek yogurt, minced garlic, lemon juice, and a pinch of salt and pepper. Mix until smooth and set aside.
Chop the vegetables: While the chicken is cooking, dice the cucumber and tomato, thinly slice the red onion, and slice the olives. Crumble the feta cheese.
Warm the wraps: If using tortillas, warm them in a dry pan over low heat for about 30 seconds on each side until pliable. If using pita bread, you can warm them similarly.
Assemble the wraps: Spread a generous amount of the yogurt sauce on each tortilla. Add sliced chicken, followed by the cucumber, tomato, red onion, olives, and crumbled feta cheese.
Roll and serve: Roll the wraps tightly, slice in half, and enjoy immediately.
