The ultimate comfort food combining all your favorite taco flavors into a hearty, hassle-free meal perfect for busy nights.

Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 2 cups tortilla chips
  • 1 onion, diced
  • 1 bell pepper, diced
  • Salt & pepper to taste

Instructions

  1. Brown the meat: In a skillet, brown the ground beef or turkey with the diced onion and bell pepper for 5-7 minutes.
  2. Transfer to slow cooker: Carefully move the browned meat mixture into the slow cooker.
  3. Add the remaining ingredients: Stir in the black beans, corn, diced tomatoes, and taco seasoning.
  4. Cook low or high: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Add chips and cheese: 30 minutes before serving, add the tortilla chips and sprinkle cheese on top.
  6. Melt the cheese: Cover and let the cheese melt for about 20-30 minutes.
  7. Serve and enjoy: Serve the casserole warm with your favorite toppings.

Notes

You can customize the recipe with different proteins and toppings. For a vegetarian option, replace meat with lentils.
