Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 tablespoons olive oil (extra virgin)

  2. Mix the marinade in a medium bowl: combine lemon juice, olive oil, garlic powder, thyme, rosemary, salt, and pepper.
  3. Apply the marinade over the chicken, ensuring they are well-coated.
  4. Add the chicken broth over the chicken in the slow cooker.
  5. Cook on low for 6-8 hours or high for 3-4 hours until fully cooked and tender.
  6. Shred the chicken directly in the slow cooker using two forks and serve as desired.

Notes

For added flavor, consider using fresh herbs instead of dried. Always check doneness with a meat thermometer.
