Slow Cooker Chicken and Noodles

A comforting dish combining tender chicken with creamy sauce and hearty noodles, all cooked perfectly in a slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 cup frozen peas and carrots
  • 2 cups egg noodles
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker.
  2. Mix the sauce: In a bowl, combine the cream of chicken soup with the chicken broth. Pour this mixture over the chicken, ensuring it’s well coated.
  3. Add vegetables: Sprinkle the chopped onion, peas, and carrots over the top of the chicken and soup mixture.
  4. Set the cooker: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should shred easily when done.
  5. Cook the noodles: About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.
  6. Combine ingredients: Shred the chicken using two forks and mix it back into the slow cooker. Stir in the cooked noodles, combining everything well.
  7. Season and serve: Taste and season with salt and pepper as needed. Garnish with parsley if desired and serve warm.

Notes

For a lower-sodium option, choose low-sodium versions of chicken broth and cream of chicken soup. Let the chicken rest for easier shredding.
