A quick and easy recipe capturing the essence of Italian cuisine with fresh tomatoes and basil.

Ingredients

  • 12 ounces Pasta (your favorite type, such as spaghetti or penne)
  • 2 cups Fresh Tomatoes, diced (substitute with canned if necessary)
  • 1 cup Fresh Basil, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil (extra-virgin recommended)
  • Salt, to taste
  • Crushed Red Pepper Flakes, optional
  • Parmesan Cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.
  2. Add the olive oil to a large skillet over medium heat. Once hot, add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the diced tomatoes and cook for about 5-7 minutes, allowing them to soften and release their juices.
  4. Add the drained pasta to the skillet with the tomatoes and toss to combine.
  5. Incorporate chopped basil, salt, and crushed red pepper flakes. Adjust seasoning if needed.
  6. Remove from heat and serve immediately topped with freshly grated Parmesan cheese.

Notes

Use the freshest tomatoes and basil for the best flavor. Cook pasta just until al dente, as it will continue to cook with the sauce.
