Creamy Garlic Tuscan Chicken

A comforting and satisfying dish featuring tender chicken in a rich cream sauce with garlic, sun-dried tomatoes, and fresh spinach.

Ingredients

  • 4 boneless, skinless Chicken Breasts
  • Salt & Pepper to taste
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • ½ cup Sun-Dried Tomatoes, chopped
  • 3 cups Spinach, fresh
  • 1 cup Heavy Cream
  • ½ cup Parmesan Cheese, grated
  • 1 teaspoon Italian Seasoning
  • Fresh Basil for garnish (optional)

Instructions

  1. Season both sides of the chicken breasts generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds, stirring constantly to prevent burning.
  4. Add the chopped sun-dried tomatoes and fresh spinach to the skillet. Cook until the spinach wilts down, about 2-3 minutes.
  5. Pour in the heavy cream, Italian seasoning, and Parmesan cheese. Stir until the cheese melts and the sauce thickens, approximately 3-5 minutes.
  6. Return the cooked chicken to the skillet, coating it with the creamy sauce. Allow it to simmer for an additional 2-3 minutes.
  7. Garnish with fresh basil if desired and serve hot.

Notes

Use a meat thermometer for perfectly cooked chicken. Don’t skip the garlic, and adjust sauce thickness with broth or water.
