Ingredients
500g boneless, skinless chicken thighs, cut into bite-sized pieces
2 tsp paprika
1 tsp garlic powder
1 tsp dried oregano
1/4 tsp coriander
1/4 tsp cayenne (optional)
1 tbsp brown sugar
1 tsp cooking salt
1 tbsp extra virgin olive oil
1/2 tbsp lemon juice
2 tbsp extra virgin olive oil
2 garlic cloves, minced
1 small onion, diced
1 red bell pepper, chopped
1 1/2 cups basmati rice
1/4 tsp chili flakes
2 tsp turmeric powder
2 1/4 cups low-sodium chicken stock
1 cup frozen peas
1/2 tsp cooking salt
Perinaise or similar dipping sauce
Green onion, finely sliced
Instructions
Prepare the Marinade: In a mixing bowl, combine paprika, garlic powder, oregano, coriander, cayenne, brown sugar, and salt. Add olive oil and lemon juice, mix well, and coat the chicken. Let sit while preparing other ingredients.
Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion and sauté for 3-4 minutes until translucent, then add minced garlic and red bell pepper, cooking for an additional 2 minutes.
Brown the Chicken: Add the marinated chicken to the pot. Cook for 5-7 minutes, stirring occasionally until browned.
Add Rice and Spices: Stir in basmati rice, chili flakes, and turmeric, mixing well.
Pour in the Broth: Add chicken stock and bring to a boil. Reduce heat to a simmer, cover pot, and cook for 15 minutes.
Stir in the Peas: Once the rice is tender and liquid is absorbed, fold in frozen peas. Cover and let sit for another 5 minutes.
Adjust Seasoning and Serve: Taste and adjust seasoning as needed. Serve hot with sauce and garnish with green onions.
Notes
Marinate the chicken for at least 15 minutes for enhanced flavor. Fresh ingredients enhance the overall taste.
