A hearty and flavorful soup that combines the delicious taste of tacos with a warm broth, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • Optional toppings: shredded cheese, sour cream, diced avocado, tortilla chips, sliced jalapeƱos

Instructions

  1. Brown the beef in a large pot over medium heat for about 5-7 minutes, breaking it apart with a spatula. Drain excess fat.
  2. Add the black beans, kidney beans, and corn, stirring to incorporate.
  3. Pour in the diced tomatoes (with their juice) and broth, stirring to combine.
  4. Season with taco seasoning, stir well, and bring to a simmer for about 10 minutes.
  5. Taste and adjust seasoning as desired.
  6. Serve hot, ladling into bowls and topping with your favorites.
