A delightful dish that beautifully marries savory chicken with sweet apples and creamy brie, perfect for weeknight dinners or special occasions.

Ingredients

  • 4 pieces Boneless skinless chicken breasts
  • 1 teaspoon Kosher salt (Adjust to taste)
  • 1 teaspoon Black pepper (Freshly ground, adjust to taste)
  • 2 medium Honeycrisp apples (Can substitute with Fuji apples)
  • 8 ounces Brie cheese (Slice cold for easier handling)
  • 1 cup Apple cider or juice (Unsweetened preferred)
  • 1/2 cup Pure maple syrup (High-quality for best flavor)
  • 2 cloves Minced garlic (Freshly minced)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Fresh thyme (Dried thyme can be used)
  • 1/4 teaspoon Extra salt for glaze (Adjust for flavor enhancement)

Instructions

  1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Using a sharp knife, make a pocket in each chicken breast by slicing horizontally without cutting all the way through. Season both sides with salt and pepper.
  2. Make the Filling: Core and slice the Honeycrisp apples into thin wedges. Take a slice of brie and stuff it, along with a few apple slices, into each chicken breast pocket. Secure with toothpicks if necessary.
  3. Sear the Chicken: In a large oven-safe skillet, heat a tablespoon of oil over medium-high heat. Once hot, add the stuffed chicken breasts. Sear for about 4-5 minutes on each side until golden brown.
  4. Prepare the Glaze: Meanwhile, in a small bowl, whisk together the apple cider, maple syrup, minced garlic, Dijon mustard, fresh thyme, and a pinch of salt.
  5. Combine and Bake: Pour the glaze over the chicken in the skillet. Bring to a simmer, then transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Serve: Remove the chicken from the oven and let it rest for a few minutes before serving. Drizzle with additional maple glaze and serve warm.

Notes

Ensure the chicken breasts are even in thickness for consistent cooking. Handle brie cold for easier slicing. Rest chicken after baking to retain moisture.
