Ingredients
1 pound ground turkey or chicken
1 cup cottage cheese
1 cup chopped spinach
1 cup diced bell peppers
1 medium onion, diced
1 cup cooked quinoa or brown rice
1 cup shredded cheese (cheddar, mozzarella, or your favorite)
1 can diced tomatoes, drained
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat the oven to 350°F (175°C).
Cook the ground turkey (or chicken) in a skillet over medium heat until browned, about 7-10 minutes. Drain excess fat if necessary.
Sauté the diced onion and bell peppers in the skillet for 4-5 minutes until softened. If using frozen spinach, add it and cook until warmed through.
Mix the cooked protein and veggies with the cooked quinoa or brown rice, cottage cheese, diced tomatoes, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
Transfer the mixture into a greased 9×13 inch baking dish and sprinkle shredded cheese on top.
Bake for about 30 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley before serving.
Notes
This casserole can be frozen and stored for meal prep. For best results, use fresh vegetables and season generously.
