Hearty Beef Stew with Cheddar Herb Dumplings

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup milk
  • 1/4 cup butter, melted

Instructions

  1. Brown the beef in batches over medium heat.
  2. Sauté the chopped onions and minced garlic until softened, about 3 minutes.
  3. Combine the sliced carrots, diced potatoes, tomato paste, thyme, rosemary, salt, and pepper.
  4. Add the beef broth and bring everything to a simmer. Cover and cook for 1.5 to 2 hours.
  5. Prepare the dumplings by mixing flour, baking powder, and salt. Add cheddar cheese and parsley, then stir in milk and melted butter.
  6. Cook the dumplings atop the stew for an additional 15-20 minutes.
  7. Serve the stew hot with dumplings on top.
