Grilled Chicken Sandwiches with Bacon and Avocado

A deliciously satisfying grilled chicken sandwich featuring crispy turkey bacon and fresh avocado, perfect for lunch or dinner.

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon garlic herb seasoning
  • 4 thinly sliced chicken breasts
  • 8 strips of turkey bacon
  • 4 slices of cheddar cheese
  • 1 avocado, sliced thin
  • 1 large tomato, sliced
  • 1 red onion, sliced
  • 2 cups spring mix lettuce
  • 4 brioche buns
  • 1/2 cup real mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons coarse grain mustard
  • 3/4 cup real mayonnaise
  • 2 cloves garlic, smashed and chopped
  • 2 green onions, chopped
  • 3 teaspoons canned adobo sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Marinade: In a large bowl, combine olive oil, lemon juice, honey, and garlic herb seasoning. Stir well.
  2. Marinate the Chicken: Add the chicken breasts to the bowl and turn to coat them in the marinade. Let the chicken marinate for 5-10 minutes.
  3. Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for about 3-5 minutes on each side, or until the internal temperature reaches 165°F (75°C). In the last minute of cooking, add a slice of cheese on top of each breast and cover the grill to help it melt.
  4. Cook the Turkey Bacon: Heat 2-3 tablespoons of olive oil in a skillet over medium heat. Carefully lay the turkey bacon slices into the hot oil, cooking 3-4 slices at a time. Cook for 2-3 minutes on each side until crispy. Transfer to a paper towel-lined plate to drain.
  5. Toast the Buns: Lightly spread softened butter on both sides of each brioche bun. Grill the buns for about 1 minute until they are toasted and golden brown.
  6. Prepare the Spring Mix: In a bowl, toss the spring mix leaves with about 3-4 tablespoons of your desired dressing, adjusting the amount to taste.
  7. Assemble the Sandwiches: Spread the mustard aioli on the bottom slices of each toasted bun. Add a piece of grilled chicken, a few slices of turkey bacon, tomato, onion, avocado, and about 1/4 cup of the dressed spring mix. Top with the upper half of the bun.
  8. Make the Dressing: In a small bowl, combine the mayonnaise, garlic, green onions, adobo sauce, lime juice, onion powder, garlic powder, and season with salt and pepper. Mix well and refrigerate for up to an hour before serving to allow the flavors to meld.
