Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 tablespoons garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 pound baby potatoes, halved
  • 3 cups carrots, chopped
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker.
  2. Mix the sauce: In a bowl, combine the minced garlic, melted butter, chicken broth, salt, and pepper. Pour this mixture evenly over the chicken.
  3. Add the vegetables: Layer the halved baby potatoes and chopped carrots on top of the chicken in the slow cooker.
  4. Cook: Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is cooked through and the vegetables are tender.
  5. Garnish and serve: Before serving, garnish with freshly chopped parsley for a pop of color.

Notes
