A cozy and savory dish that elevates classic French onion soup into a hearty meal with tender beef, rich onion flavors, and creamy textures.

Ingredients

  • 2 lbs Beef Stew Meat (can substitute with chuck roast or round steak)
  • ¼ cup Flour (omit for gluten-free)
  • 1 tbsp Garlic Powder (or substitute with fresh minced garlic)
  • 1 tbsp Onion Powder (or fresh onions, chopped)
  • 1 tbsp Salt (adjust to taste)
  • 1 tsp Black Pepper (adjust to taste)
  • 2 tbsp Butter (or use olive oil for a healthier option)
  • 3 large Yellow Onions (sliced)
  • ¾ cup Beef Stock (low-sodium preferred)
  • 1 packet French Onion Soup Mix (homemade mix is best)
  • 1 leaf Bay Leaf (remove before serving)
  • ½ tsp Dried Rosemary (thyme can be a good substitute)
  • 4 oz Cream Cheese (cubed; Greek yogurt can be used as a substitute)
  • ¼ cup Sour Cream (heavy cream can be used for a richer texture)
  • 12 oz Egg Noodles (use gluten-free pasta if needed)
  • 1 cup French Fried Onions (for added crunch)

Instructions

  1. Prepare the beef by tossing it with flour, garlic powder, onion powder, salt, and black pepper.
  2. Sear the beef in a skillet over medium-high heat until browned on all sides, about 5-7 minutes.
  3. Layer sliced onions evenly on the bottom of the slow cooker.
  4. Add the seared beef on top of the onions.
  5. Mix beef stock, French onion soup mix, bay leaf, and dried rosemary in a bowl; pour over the beef and onions.
  6. Cook on low for 8 hours or high for 4 hours, until beef is tender.
  7. Prepare the creaminess by stirring in cream cheese and sour cream until fully incorporated.
  8. Cook egg noodles according to package instructions, drain, and add to beef mixture.
  9. Serve hot, topped with French fried onions for added texture.

Notes

Searing the beef enhances flavor, and layering onions ensure they caramelize nicely.
