Ingredients
2 chicken breasts
2 cans Rotel tomatoes with green chilis
2 cans black beans (drained and rinsed)
1 can corn
32 oz chicken broth
1 packet dry ranch seasoning
8 slices cooked and crumbled bacon
8 oz cream cheese (at room temperature)
1 cup shredded cheddar cheese
Salt and pepper to taste
2 tbsp chili powder
1 tbsp cumin
1 tbsp garlic powder
Extra cheese (for topping)
Fritos (for serving)
Hot sauce (for serving)
Instructions
Prepare the Slow Cooker: Place the chicken breasts at the bottom of the slow cooker.
Add the Main Ingredients: Pour in the Rotel tomatoes, black beans, corn, and chicken broth. Add ranch seasoning, chili powder, cumin, garlic powder, and season with salt and pepper. Stir gently.
Set the Cooking Time: Cover and set to low for 6 to 8 hours or high for 4 hours.
Add Cream Cheese: At the halfway mark, add cream cheese and allow it to melt.
Shred the Chicken: Once done, remove and shred the chicken, then return it to the slow cooker.
Final Touch: Sprinkle cheddar cheese on top and allow it to melt before serving.
Notes
Use fresh spices and beans for the best flavor. Adjust the spice level by adding jalapeƱos or using hotter tomatoes.
