Ingredients

  • 8 ounces fettuccine pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped parsley (optional), for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water, then drain the pasta and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink in the center.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Pour in the heavy cream, bringing it to a gentle simmer. Stir frequently for 2-3 minutes until the cream starts to thicken slightly.
  5. Gradually add the grated Parmesan cheese, whisking it into the sauce until melted and smooth.
  6. Add the cooked fettuccine to the skillet, tossing to coat the pasta in the creamy Alfredo sauce. Cook for an additional minute to let the flavors meld, then remove from heat.
  7. Serve immediately, garnished with chopped parsley for a touch of color and freshness.

Notes

Reserve pasta water to help adjust sauce consistency. For added nutrition, vegetables can be incorporated.
