Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 cups baby carrots
  • 8 oz button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Buttery mashed potatoes (prepared separately)

Instructions

  1. Combine ingredients in the slow cooker: Add the chicken thighs, baby carrots, sliced mushrooms, diced onion, minced garlic, and season with salt and pepper.
  2. Add cream and broth: Pour the heavy cream and chicken broth over the top, mixing gently to combine everything.
  3. Cook: Cover the slow cooker and cook on low for 6-7 hours, or until the chicken is tender.
  4. Prepare mashed potatoes: As the casserole is cooking, prepare your buttery mashed potatoes.
  5. Serve: Once cooked, serve the creamy chicken casserole over the mashed potatoes.
