A comforting casserole featuring tender chicken and creamy potatoes, perfect for weeknight dinners.

Ingredients

  • 4 chicken breasts
  • 4 cups diced potatoes
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup chopped onions (optional)
  • 1 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the cream of chicken soup, milk, garlic powder, salt, and pepper until smooth.
  3. Layer the diced potatoes in a greased 9×13 inch baking dish.
  4. Place the chicken breasts on top of the potatoes.
  5. Pour the soup mixture over the chicken and potatoes.
  6. Sprinkle shredded cheese on top.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes until the chicken is cooked through and the potatoes are tender.
  9. Let the casserole sit for a few minutes before serving.
