Easy One Pan Chicken & Rice Casserole

A comforting dish that brings together tender chicken, fluffy rice, and a medley of vegetables in one delicious, easy-to-make meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) so it’s ready for baking.
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and the onion is translucent.
  3. Stir in the rice, chicken broth, and mixed vegetables. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low. Cover the skillet and simmer for about 10 minutes, allowing the rice to absorb some of the liquid.
  5. Add the shredded chicken and half of the cheese to the skillet. Stir well to combine all ingredients.
  6. Cover the skillet again and transfer it to the preheated oven. Bake for 25 minutes, or until the rice is fully cooked and the liquid has been absorbed.
  7. After 25 minutes, remove the skillet from the oven and sprinkle the remaining cheese on top. Bake for an additional 5 minutes until the cheese is melted and bubbly.
  8. Allow the casserole to cool for a few minutes before serving. This helps the flavors meld together and makes serving easier.

Notes

You can use rotisserie chicken for convenience or cook your own. Long grain rice works best, but jasmine or basmati can be substituted. Choose your favorite cheese for melting. Feel free to use fresh or frozen mixed veggies.
