A delightful blend of creamy sauce and tender chicken that’s quick to prepare, perfect for busy weeknights or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup baby spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set it aside on a plate.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped sun-dried tomatoes, stirring for another minute until everything is well-mixed.
  3. Pour in the chicken broth and heavy cream. Stir in the Italian seasoning. Allow the mixture to come to a simmer, which will help develop the flavors and thicken the sauce slightly.
  4. Add the baby spinach to the skillet, cooking until it wilts, which should take about 2-3 minutes.
  5. Return the chicken to the skillet, spooning the creamy sauce over the top to coat the chicken. Let it simmer together for a few minutes to meld all the flavors. Serve warm, garnished with fresh basil.

Notes

Using fresh ingredients will enhance the overall flavor. For a lighter version, substitute half-and-half for the heavy cream.
