Effortless Slow Cooker Chicken Fajitas with tender chicken and vibrant vegetables, perfect for busy weeknights.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes (optional)
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, cheese, avocado

Instructions

  1. Place the chicken breasts in the slow cooker, ensuring they are laid flat and evenly spaced for proper cooking.
  2. Add the sliced red and green bell peppers and onion on top of the chicken.
  3. Pour the entire packet of fajita seasoning over the chicken and vegetables.
  4. If you’re using diced tomatoes, add them in after the seasoning.
  5. Sprinkle the mixture with salt and pepper to taste.
  6. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 4 to 6 hours until the chicken is fully cooked and easily shreds.
  7. Once cooking is complete, use two forks to shred the chicken directly in the slow cooker.
  8. Spoon the chicken and vegetable mixture into tortillas and top with your favorite toppings.

Notes

Cut vegetables uniformly and avoid overcrowding the slow cooker for best results.
