A creamy and comforting soup that combines tender gnocchi, shredded chicken, and fresh spinach in a flavorful broth, perfect for an easy weeknight dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked shredded chicken
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic; sauté until the onions become translucent, about 3-4 minutes.
  2. Stir in the chicken broth and bring it to a simmer. Allow it to cook for 2-3 minutes.
  3. Pour in the heavy cream, followed by the cooked shredded chicken and gnocchi. Cook until the gnocchi float to the top, about 3-5 minutes.
  4. Stir in the fresh spinach and Italian seasoning. Cook for an additional 2-3 minutes, or until the spinach has wilted.
  5. Season the soup with salt and pepper according to your preference.
  6. Ladle the soup into bowls and top with grated Parmesan cheese before serving hot.

Notes

For a lighter version, you can substitute the heavy cream with half-and-half or a plant-based alternative. Store leftovers in an airtight container in the refrigerator for up to 3 days.
