A delightful one-pan meal combining tender chicken, vibrant broccoli, and pasta, perfect for busy weeknights.

Ingredients

  • 2 cups pasta (penne or fusilli)
  • 1 pound chicken breast, diced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  4. Stir in broccoli florets and chicken broth. Cover and cook for another 4-5 minutes, until the broccoli is tender.
  5. Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper.
  6. Sprinkle with grated Parmesan cheese if desired and serve hot.

Notes

For a gluten-free option, consider using gluten-free pasta. You can also use frozen broccoli florets if fresh is unavailable.
