Dutch Oven Whole Chicken

A comforting and satisfying dish that transforms a simple whole chicken into a succulent meal with tender vegetables.

Ingredients

  • 1 whole chicken (about 4–5 pounds)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 potatoes, chopped
  • 4 carrots, chopped
  • 1 onion, quartered
  • Fresh herbs (like rosemary or thyme) for seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub the chicken thoroughly with olive oil and season it generously with salt, pepper, garlic powder, and onion powder.
  3. Place the chopped potatoes, carrots, and quartered onion in the bottom of a Dutch oven.
  4. Sit the seasoned chicken on top of the vegetables.
  5. Cover the Dutch oven with its lid and place it into the preheated oven.
  6. Roast for approximately 90 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  7. Remove the Dutch oven from the oven and allow the chicken to rest for about 10 minutes before carving.

Notes

Check the internal temperature with a meat thermometer to ensure it’s cooked perfectly. Letting the chicken rest before carving allows the juices to redistribute.
