Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 (15 oz) cans white beans (like cannellini or great northern)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 cups chicken broth
  • 1 cup heavy cream or sour cream (optional)
  • Chopped cilantro, for garnish (optional)

Instructions

  1. Prepare chicken: Place the chicken breasts at the bottom of the crockpot.
  2. Add vegetables and spices: Layer the chopped onion, minced garlic, and diced green chilies on top of the chicken. Sprinkle cumin, chili powder, paprika, salt, and pepper over everything.
  3. Pour in the broth: Carefully add the chicken broth to ensure chicken is submerged.
  4. Add the beans: Drain and rinse the white beans, then gently fold them into the mixture.
  5. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken: About 30 minutes before serving, shred the chicken in the crockpot using two forks.
