The ultimate comfort meal, perfect for chilly evenings. This hearty, creamy soup is filled with tender chicken, nourishing vegetables, and comforting noodles, all simmered together.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth
  • 1 cup egg noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Dice the vegetables and season the chicken with salt, pepper, and thyme.
  2. Place the chicken at the bottom of the crockpot. Add the diced carrots, celery, and onion on top. Pour in the chicken broth over the veggies.
  3. Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is tender.
  4. Remove the chicken, shred it into bite-sized pieces and return it to the pot.
  5. Add the heavy cream and flour until fully combined. Then, add the egg noodles and cook on high for an additional 30-40 minutes.
  6. Taste and adjust seasoning with more salt, pepper, or thyme as needed.

Notes

Avoid overcooking the noodles; they will continue to cook after being added. Use quality chicken broth for the best flavor.
