Ingredients

  • 2 lbs chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 cup sweet and sour sauce
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: Place the cubed chicken in the Crock-Pot, ensuring the pieces are evenly distributed.
  2. Add the vegetables: Add the pineapple chunks, chopped red bell pepper, green bell pepper, and onion to the chicken.
  3. Mix the sauce: In a separate bowl, combine the sweet and sour sauce, soy sauce, vinegar, sugar, and cornstarch (if desired). Stir until well mixed.
  4. Combine everything: Pour the sauce over the chicken and vegetables in the Crock-Pot, making sure everything is well coated.
  5. Cook: Cover and cook on low for 240-360 minutes or on high for 120-180 minutes, until the chicken is cooked through and tender.

Notes

Ensure chicken pieces are of similar size for even cooking. Stir midway for even flavor distribution.
