A delightful dish that elevates chicken and rice into a satisfying meal with crispy chicken, aromatic spices, and vibrant vegetables.

Ingredients

  • 4 bone-in chicken thighs
  • 2 cups long-grain rice
  • 3 cups chicken stock
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish
  • 2 limes, cut into wedges
  • Salt and black pepper, to taste

Instructions

  1. Pat the chicken thighs dry with paper towels. Generously season both sides with salt, black pepper, half the smoked paprika, and a pinch of turmeric. Allow them to sit at room temperature for 10 minutes while you prepare the other ingredients.
  2. Heat olive oil in a large, heavy-bottomed pan or Dutch oven over medium-high heat. Place the chicken thighs skin-side down and cook without moving for 8-10 minutes until the skin is deeply golden and crispy. Flip the chicken and cook for another 5 minutes. Remove the chicken and set aside on a plate.
  3. Lower the heat to medium and add the diced onion and bell peppers to the same pan with the chicken drippings. Sauté for about 5 minutes, or until softened. Add the minced garlic and sauté for an additional minute until fragrant. Stir in the remaining turmeric and smoked paprika, ensuring the vegetables are evenly coated.
  4. Add the rice to the pan and stir well to coat it with oil and spices. Toast for 2 minutes to deepen the flavor.
  5. Pour in the chicken stock and stir well. Bring the mixture to a boil. Nestle the chicken thighs skin-side up into the rice mixture. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let the dish rest, covered, for 5 minutes. Fluff the rice gently around the chicken with a fork. Garnish with fresh cilantro and serve with lime wedges. Drizzle any pan juices over the chicken before serving for an extra burst of flavor.

Notes

Ensure crispy skin by avoiding overcrowding the pan while searing. Always taste the chicken stock before adding additional salt.
