Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
2 cups cooked chicken, shredded
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 can (4 oz) diced green chilies
1 cup corn kernels (fresh or frozen)
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup heavy cream
Tortilla strips for garnish
Fresh cilantro for garnish
Avocado for garnish
Instructions
Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, garlic, and bell pepper, and sauté until tender, about 5 minutes.
Combine Ingredients: Stir in the shredded chicken, chicken broth, diced tomatoes, green chilies, corn, cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
Add Cream: Stir in the heavy cream and heat through for an additional 5 minutes, ensuring everything is well combined.
