A creamy, comforting pasta dish showcasing earthy mushrooms in a luscious sauce, perfect for weeknight dinners or special occasions.

Ingredients

  • 8 ounces pasta (such as fettuccine or penne)
  • 1 tablespoon olive oil
  • 3 cups sliced mushrooms (cremini or button)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • About 2 cups fresh spinach
  • Fresh parsley for garnish

Instructions

  1. Boil water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until browned and tender, about 5-7 minutes.
  3. Stir in the minced garlic and dried thyme; cook for an additional minute until fragrant.
  4. Reduce the heat and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan, mixing until it melts.
  5. Add the cooked pasta and spinach into the sauce, tossing gently to coat. Season with salt and pepper.
  6. Plate the pasta and garnish with fresh parsley before serving. Enjoy!

To prevent mushy pasta, cook it al dente. Fresh mushrooms yield the best flavor.
