A comforting and hearty soup made with tender chicken, wild rice, and a rich creamy broth, perfect for chilly nights.

Ingredients

  • 1 cup wild rice
  • 1 lb chicken breast, cooked and shredded
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Add seasonings: Stir in the garlic powder and thyme, allowing them to cook with the vegetables for an additional minute to release their flavors.
  3. Combine ingredients: Add the shredded chicken and wild rice to the pot. Pour in the chicken broth and give everything a good stir.
  4. Simmer the soup: Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 45 minutes, or until the wild rice is tender.
  5. Finish with cream: After the rice has cooked, stir in the heavy cream. Season with salt and pepper to taste, and let it warm through before serving.

Notes

This soup stores well and is perfect for meal prep. Consider varying the vegetables for additional nutrition.
