Cheeseburger Macaroni Soup

A delightful blend of flavors that combines the comforting essence of a cheeseburger with the warmth of a hearty soup, perfect for busy weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 cup elbow macaroni
  • 1 cup carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is softened, about 2-3 minutes.
  3. Cook the ground beef, breaking it apart as it cooks. Brown until fully cooked, about 5-7 minutes.
  4. Stir in the diced carrots, paprika, salt, and pepper. Allow to cook for another 3 minutes until the vegetables begin to soften.
  5. Pour in the beef broth and bring the mixture to a boil.
  6. Stir in the elbow macaroni and cook, uncovered, until the pasta is tender, about 8-10 minutes.
  7. Reduce the heat to low and stir in the shredded cheddar cheese until melted and creamy.
  8. Ladle the soup into bowls and serve hot, garnished with additional cheese if desired.

Notes

Adjust seasonings according to taste; for a spicier version, add cayenne pepper.
