1 medium butternut squash
1 onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 cup vegetable broth
1/2 cup heavy cream or coconut cream
Salt and pepper to taste
Pasta of choice
Parmesan cheese (optional)
Instructions
Preheat your oven to 400°F (200°C). Cut the butternut squash in half, scoop out seeds, and brush cut sides with olive oil. Roast cut side down on a baking sheet for 30-40 minutes until tender.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add chopped onion and sauté until soft, about 5-7 minutes. Add minced garlic and sauté for another minute.
Scoop the roasted squash flesh into the skillet with onions and garlic. Pour in vegetable broth and let simmer for about 5 minutes.
Use an immersion blender to blend the sauce until smooth. Stir in heavy cream and season with salt and pepper.
Cook pasta according to package instructions, drain, and toss with butternut squash sauce.
Plate the pasta and top with Parmesan cheese, if desired. Serve warm.
