Delightful cookies that combine the classic flavors of blueberry muffins with a crunchy streusel topping, perfect for any time of day.

Ingredients

  • 1 cup butter (softened)
  • ¾ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup all-purpose flour (for streusel)
  • ¼ cup sugar (for streusel)
  • 2 tbsp cold butter (cubed, for streusel)
  • ½ cup powdered sugar (for icing)
  • 1–2 tsp milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Cream together the softened butter, sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, beating well until combined.
  4. Mix together 2 ½ cups of flour and baking soda in a separate bowl, and gradually add to the butter mixture.
  5. Fold in the blueberries gently with a spatula.
  6. Prepare the streusel topping by mixing ¼ cup flour, ¼ cup sugar, and cubed butter until crumbly.
  7. Scoop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  8. Add streusel on top of each dough mound.
  9. Bake for 10-12 minutes until edges are golden and centers are slightly underbaked.
  10. Prepare icing by mixing powdered sugar with milk until smooth, for drizzling over cookies.
