A comforting and satisfying chili made with tender chicken, creamy beans, and warm spices, perfect for chilly evenings.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 2 cans white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup cream or sour cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Cilantro (optional topping)
  • Avocado (optional topping)
  • Lime (optional topping)

Instructions

  1. Sauté onions and garlic: In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is soft and translucent, about 3-4 minutes.
  2. Combine ingredients: Stir in the cooked chicken, drained white beans, chicken broth, cumin, chili powder, salt, and pepper to taste. Mix well to combine.
  3. Simmer the chili: Bring the mixture to a gentle simmer. Allow it to bubble away for about 20 minutes, stirring occasionally to prevent sticking.
  4. Add cream or sour cream: Once the chili has simmered, reduce the heat and stir in the cream or sour cream until well incorporated. Let it heat through for an additional 2-3 minutes.
  5. Serve: Ladle the chili into bowls and top with your choice of optional toppings like fresh cilantro, avocado slices, or a squeeze of lime juice.
