Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 can (14.5 oz) canned diced tomatoes
1 cup heavy cream
1 cup fresh basil, chopped
Salt and pepper to taste
Instructions
Prepare the chicken: Season both sides of the chicken breasts with salt and pepper.
Heat the oil: In a large skillet, heat the olive oil over medium heat until shimmering.
Cook the chicken: Add the chicken to the skillet and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from skillet and set aside.
Sauté garlic: In the same skillet, add minced garlic and sauté for 1 minute, or until fragrant but not browned.
Add tomatoes: Pour in the canned diced tomatoes (with juices), stirring to combine. Allow to simmer for about 5 minutes.
Incorporate cream: Stir in the heavy cream and let it simmer for 2-3 minutes until slightly thickened.
Mix in basil: Add the chopped basil to the sauce, adjusting seasoning with more salt and pepper if necessary.
Return the chicken: Nestle the cooked chicken back into the skillet and coat with the sauce. Cook for an additional 2-3 minutes to reheat.
Serve: Plate your creamy tomato basil chicken and drizzle with more sauce. Enjoy warm!
Notes
Don’t overcook the chicken and always use fresh basil for the best flavor.
