A hearty and comforting dish that combines tender chicken and crispy potatoes, perfect for busy weeknights or family gatherings.

Ingredients

  • 4 medium potatoes, diced into 3/4 inch (2 cm) cubes
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 pounds boneless skinless chicken (breasts or thighs)
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by dicing them into approximately 3/4 inch (2 cm) cubes.
  3. Mix the potato cubes, minced garlic, olive oil, salt, and pepper in a large bowl. Toss until well-coated.
  4. Spray a large (9×13) baking dish with non-stick spray. Spread the potato mixture evenly in the dish and bake for about 15 minutes.
  5. Add the chicken pieces among the potato mixture, ensuring they’re nestled in. Optionally, brush with olive oil and add more salt and pepper.
  6. Return the dish to the oven and bake for another 20 to 25 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are browned.
  7. Sprinkle mozzarella cheese over the top and bake for an additional 5 minutes until melted and bubbly.
  8. Serve garnished with chopped parsley if desired.

Notes

Try to cut the potatoes uniformly for even cooking and ensure the chicken is evenly spaced for best heat distribution. Can be stored in the refrigerator for up to 3 days or frozen before baking.
