A hearty and satisfying beef chili that’s easy to prepare and packed with rich flavors. Perfect for cold evenings and meal prepping.

Ingredients

  • 4 slices of bacon
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Cook the bacon: In a large pot, cook the bacon over medium heat until crispy. Remove from the pot and set aside, leaving the grease behind.
  2. Brown the beef: Add the ground beef to the pot and cook until browned, breaking it up as it cooks.
  3. Sauté vegetables: Stir in the chopped onions, bell peppers, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  4. Add tomatoes and beans: Mix in the canned tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper. Stir well.
  5. Simmer: Bring the chili to a boil over medium-high heat. Reduce the heat to low and let it simmer uncovered for about 120 minutes, stirring occasionally.
  6. Adjust consistency: If the chili becomes too thick, add a bit of water to reach your desired consistency.
  7. Serve and garnish: Serve hot, garnished with the crispy bacon and your choice of toppings.

Notes

For added flavor, consider allowing the chili to sit for a few hours or overnight after cooking.
