Ingredients

  • 3-4 pounds beef chuck roast
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Herbs (such as thyme and rosemary) for seasoning

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef chuck roast liberally with salt and pepper on all sides.
  3. Sear the roast in a large skillet with olive oil over medium-high heat until golden-brown, about 2-3 minutes per side.
  4. Prepare the vegetables by placing chopped carrots, potatoes, onion, and minced garlic in a roasting pan.
  5. Arrange the seared roast on top of the vegetables in the roasting pan.
  6. Mix the beef broth, Worcestershire sauce, and herbs in a bowl and pour it over the roast.
  7. Roast in the oven for about 3-4 hours, or until the meat is fork-tender.
  8. Rest the roast for 15-20 minutes before slicing and serving.
