A warm and comforting Hungarian dish featuring tender beef in a rich, flavorful sauce, perfect for family gatherings.

Ingredients

  • 2 lb beef chuck roast, cubed into 1-2 inch pieces
  • Salt & pepper, to taste
  • 2 tbsp all-purpose flour (for coating the beef)
  • 1 onion, diced
  • 1 red bell pepper, finely diced
  • 1 green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 3 tbsp sweet paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp caraway seeds, lightly crushed
  • 15 oz can of crushed tomatoes
  • 2 cups beef broth
  • 1 bay leaf
  • Sour cream, for serving
  • Fresh dill, for serving
  • Fresh parsley, for serving

Instructions

  1. Prep the beef: In a mixing bowl, add cubed beef and season generously with salt and pepper. Dust with flour and mix well until coated.
  2. Brown the beef: Heat olive oil in a large Dutch oven over medium-high heat. Add beef in a single layer and sear for about a minute on each side. Transfer browned beef to a bowl.
  3. Sauté the vegetables: In the same pot, add more olive oil if needed. Lower heat, then add diced onion and sauté for 3-5 minutes until softened. Add bell peppers and garlic, cooking for an additional minute or two.
  4. Add spices: Sprinkle paprika, oregano, and caraway seeds into the vegetable mixture. Stir to coat the vegetables evenly and cook for another minute.
  5. Deglaze and combine: Pour in crushed tomatoes and beef broth, scraping up any browned bits from the pot. Add bay leaf and return browned beef along with its juices.
  6. Simmer: Bring to a boil. Reduce heat to low, cover, and let simmer gently for about 1 hour. Remove the lid and stir, reducing for another hour on medium-low until meat is tender.
  7. Serve and enjoy: Remove from heat. Serve hot over egg noodles or mashed potatoes, topped with sour cream and fresh dill or parsley.

Notes

Make sure the oil is hot enough before adding beef for best searing results. This dish tastes even better as leftovers.
