A delicious and satisfying dish featuring crispy chicken, vibrant vegetables, and fluffy rice, all coated in a flavor-packed bang bang sauce.

Ingredients

  • For the Bang Bang Sauce:
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • For the Fried Rice:
  • 2 cups cooked rice
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup mixed vegetables (e.g., peas, carrots, bell peppers)
  • 2 eggs, beaten
  • 2 tablespoons oil for frying
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Prepare the Bang Bang Sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a medium bowl. Set aside.
  2. Heat oil in a skillet or air fryer over medium-high heat. Add the chicken pieces and cook until crispy and cooked through, about 7-8 minutes. Toss the chicken in the bang bang sauce until well coated.
  3. Add the mixed vegetables to the skillet. Stir-fry for about 3-4 minutes until tender but still vibrant.
  4. Push the vegetables to one side of the skillet. Pour in the beaten eggs and scramble until fully cooked, about 2-3 minutes.
  5. Add the cooked rice and soy sauce to the skillet. Mix everything together and cook for another 2-3 minutes until heated through.
  6. Serve the fried rice topped with crispy chicken and garnish with green onions.

Notes

Use day-old rice for the best texture and ensure chicken is golden for optimum flavor.
