Ingredients

  • 1 tablespoon olive oil
  • 2 onions, sliced
  • 1 cup apple cider
  • 1 cup chicken stock
  • 4 chicken thighs
  • 2 apples, sliced
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they become translucent, about 5 minutes.
  3. Pour in the apple cider and chicken stock. Bring the mixture to a gentle simmer, stirring occasionally.
  4. Place the chicken thighs in a baking dish and season generously with salt and pepper.
  5. Arrange the sliced apples around the chicken in the baking dish.
  6. Pour the onion and liquid mixture over the chicken and apples, ensuring everything is well coated.
