A flavorful and warm dish that combines a comforting blend of spices, tender chicken, and crispy tortilla strips, perfect for any day of the week.

Ingredients

  • 6 soft corn tortillas
  • 1 tbsp butter
  • 1 medium yellow onion, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup jalapeno peppers, chopped
  • 3 tsp minced garlic
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1/4 tsp red cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp adobo all-purpose seasoning
  • 1 tbsp tomato paste
  • 4 cups chicken stock
  • 2 cups shredded rotisserie chicken
  • Optional: Sour cream
  • Optional: Mexican shredded cheese
  • Optional: Sliced avocado

Instructions

  1. Prepare the tortilla strips: Stack the soft corn tortillas, then cut them into strips.
  2. Fry the tortilla strips: Heat a cooking pan on medium-high. Add a small amount of oil, then fry the tortilla strips for about 2 minutes, or until they begin to brown. Remove from heat and place on a paper towel to drain excess oil.
  3. Cook the onions: In a separate pan, heat butter over medium heat. Add the chopped onions and cook until they become translucent.
  4. Add the aromatics: Stir in the chopped cilantro, jalapeƱos, minced garlic, chili powder, paprika, black pepper, cayenne pepper, garlic powder, and adobo seasoning. Mix well to combine.
  5. Combine soup ingredients: Add the tomato paste, chicken stock, and shredded rotisserie chicken to the pan. Stir until everything is well-blended.
  6. Simmer the soup: Cover and cook on medium-low heat for about 15 minutes, allowing the flavors to meld together.
  7. Serve and garnish: Ladle the soup into bowls and top with the crispy tortilla strips and any optional garnishes you like, such as sour cream, shredded cheese, or avocado.

Notes

Fry tortilla strips in batches for best results. Adjust spice levels to taste. Use fresh ingredients for enhanced flavor.
