Apple and Brie Stuffed Chicken

Combining savory chicken with sweet apples and creamy brie, this stuffed chicken recipe is both delicious and visually appealing, perfect for impressing guests.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 apples (Honeycrisp or Fuji for sweet, Granny Smith for tart)
  • 6 oz brie cheese
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp dried thyme (plus extra fresh thyme for garnish)
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the apples by slicing them into thin wedges and cut the brie into thin slices.
  3. Make the glaze by whisking together the maple syrup, Dijon mustard, minced garlic, and dried thyme until well combined.
  4. Prepare the chicken by carefully cutting a pocket into each breast, ensuring not to slice all the way through. Season both sides with salt and pepper.
  5. Sear the chicken in a large cast iron skillet over medium-high heat with olive oil for 2–3 minutes on each side until golden but not cooked through. Remove from the skillet and set aside.
  6. Stuff each chicken breast with 3 apple slices and 3 slices of brie. Secure with toothpicks if needed.
  7. Bake the chicken in the skillet, brushing each piece with the glaze, and transfer to the oven for 20–22 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Rest the chicken for 5 minutes after removing it from the oven. Garnish with additional fresh thyme before serving.

Notes

For best results, use a balanced mix of sweet and tart apples. Do not overcook the chicken during the searing process, as it will finish cooking in the oven.
