Delightful shrimp tacos paired with a refreshing mango salsa for a perfect summer meal.

Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeรฑo pepper, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Corn tortillas (8 small)
  • Lime wedges, for serving
  • Optional toppings: sliced avocado, crumbled feta or cotija cheese, hot sauce

Instructions

  1. Prepare the shrimp: In a mixing bowl, combine the shrimp, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss until the shrimp are evenly coated in the spices.
  2. Cook the shrimp: In a skillet over medium-high heat, add the seasoned shrimp. Cook for 2-3 minutes on each side until they turn pink and are opaque. Remove from heat and set aside.
  3. Make the mango salsa: In a separate bowl, combine the diced mango, red onion, jalapeรฑo (if using), cilantro, lime juice, and salt. Mix well and adjust seasoning to taste.
  4. Warm the tortillas: Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they become warm and pliable.
  5. Assemble the tacos: To each tortilla, add an even portion of shrimp and top with the mango salsa. Add any additional toppings as desired.
  6. Serve: Serve the tacos immediately, garnished with lime wedges on the side.

Notes

Don’t overcook the shrimp to avoid a rubbery texture. Use fresh ingredients for the best flavor.
