A creamy, comforting Chicken Alfredo Pasta recipe that’s quick and easy to prepare, perfect for family dinners.

Ingredients

  • 12 oz fettuccine or your choice of pasta
  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, add the chicken pieces. Season with salt and pepper. Cook for 5-7 minutes, stirring occasionally until the chicken is golden brown and cooked through.
  3. Add the minced garlic to the skillet with the chicken and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir well, scraping any brown bits from the bottom of the skillet. Bring to a gentle simmer and reduce heat to low.
  5. Gradually stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, add some reserved pasta water a little at a time until the desired consistency is reached.
  6. Add the drained pasta to the skillet and toss to coat all the ingredients in the creamy sauce. Cook together for an additional 2-3 minutes to allow flavors to meld. Adjust seasoning with additional salt and pepper if needed.
  7. Transfer to plates or a serving dish, garnish with chopped parsley, and enjoy!

Notes

For best results, use freshly grated Parmesan cheese and ensure chicken is cut into even pieces.
