Baked Zucchini Fries are a delightful, crispy alternative to traditional French fries, making for a perfect side dish or snack.

Ingredients

  • 2 medium Zucchini, sliced into fries (approx. ¼-inch thick)
  • 2 Eggs, beaten
  • ½ cup Parmesan cheese, grated
  • 1 cup Breadcrumbs (use gluten-free if needed)
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the Zucchini: Wash and cut the zucchini into fry-shaped pieces, about ¼-inch thick.
  3. Prepare the Breading Stations: In one bowl, beat the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. Coat the Zucchini: Dip each zucchini fry into the beaten eggs, then roll it in the breadcrumb mixture until coated.
  5. Arrange on the Baking Sheet: Place the coated fries on the baking sheet in a single layer and drizzle with olive oil if desired.
  6. Bake: Bake for 20-25 minutes until golden brown and crispy. Flip halfway through.

Notes

For extra crunch, consider using panko breadcrumbs. Avoid overcrowding the baking sheet for the best results.
